Turkey and Spinach Paninis


Serves 2

  • Vegetable cooking spray
  • 2 tablespoons cream cheese
  • 4 oz Peppercorn Turkey breast luncheon meat
  • 4 cups of torn spinach
  • 1 garlic clove, halved
  • 2 teaspoons olive oil
  • 1 dash of salt and pepper
  • 2 slices thick, home-baked bread or sliced French baguette


Heat Panini Press (can also use a skillet). Rub one of bread with garlic halves, and brush with olive oil. Spread other side with cream cheese (each slice gets 1/2 tsp of cream cheese). Arrange 2 slices of bread, oiled sides down, in press. Layer Turkey and Spinach. Sprinkle with salt and pepper. Top with other two slices of bread, cream cheese side facing inward. Close and cook for 1 minute or until toasted.
